Wheat Flour Puttu

Puttu is our own delicacy…It is the food of God’s Own Country...Before, people in Malabar only used rice flour to make puttu…now we are looking for different ways to have nutritious food..Wheat is supposed to be rich in fibre and we all opt for wheat even though we love rice dishes… We have developed a liking for wheat…Wheat puttu I have posted before…this time in combination with spicy chicken stew we had the puttu…

Instructions
  1. Dry roast the wheat flour until aromatic, see that it does not change color. Keep aside to become cold.
  2. Mix salt and water and sprinkle slowly to the flour making sure not to make it more wet and lumpy.
  3. Sprinkle water and keep on mixing to form a uniform crumbled dough without being sticky.
  4. In a puttu cylinder first put the mesh, then a handful of coconut, the wet dough, again coconut, then dough, like this alternate until the the cylinder is full.
  5. Heat water in a puttu maker. When starts boiling fix the cylinder on top.
  6. When the steam escapes through the top keep in low flame and cook for 10 minutes and transfer to a vessel and serve with veg or non veg dish of your choice or even can be had with banana and sugar.
  7. Here I had it with chicken stew and was quite tasty..Like puttu stew also is our own favourite dish.
