An authentic Kerala dish…we all like stew to go with appam, puttu or any Indian roties…Normally we prefer the non-veg stew whether it is mutton or chicken…even beef…Here I made spicy vegetable stew with potato, carrot and I had broccoli and added that also and this came out delicious…

Ingredients

Instructions
  1. Heat ghee or coconut oil in a pan, add clove, saute.
  2. Now add the cut onions, ginger, green chillies, carrot, beans, potato and broccoli and saute until onion is translucent.
  3. To this add the thin coconut milk and once starts boiling keep in low flame and cook until the potato is cooked.
  4. Mash the potato a little to get a thicker gravy.
  5. Now add the thick coconut milk, curry leaves, salt and pepper powder, once bubble starts forming switch off the flame. Do not allow it to boil or else the coconut milk curdles.
  6. Stew is better served when little cold and gets thicker.
  7. Have with idly, dosa, appam, puttu...rice varieties or with anything.
