  1. Pressure cook the dal with just enough water and turmeric powder till done.
  2. Soak the tamarind in water and keep aside.
  3. Peel the shallots and keep aside.
  4. When the pressure settles, open the cooker, mash the dal and keep aside.
  5. Heat ghee in a pan, add the mustard, fenugreek seeds, red chilli, curry leaves and green chilli and saute till mustard crackles.
  6. Now add the shallots and tomato, saute until shallots are translucent, add to mashed dal.
  7. To this add the sambar powder, tamarind juice. mix well and keep boiling until onions are cooked but firm, not soggy.
  8. Add enough salt and coriander leaves, just boil once to combine and switch off the flame. Have with ghee.
  9. Sambar always tastes good with ghee.
  10. Have with rice or any other South Indian dish.
