Peppery noodle with soy sauce

Noodles is not our favorite…at least not for my husband…he prefers idly or dosa any day…only when there is no batter we think of making some other dish..Today  is one such day…there was no dosa batter and the idea of making noodles struck me…This packet of noodles was there in the kitchen shelf waiting to get cooked…never had a chance…

Anything spicy he loves..and I made this very spicy noodles with pepper powder and dark soy sauce…not much veggies because he practically dislikes most of the veggies…

Instructions
  1. Boil water with salt and oil. Once water starts boiling add the noodles and keep on cooking in low flame for 5 to 6 minutes until noodles are cooked but not mushy but firm( al dante).
  2. Strain the noodles, pour cold water over the strained noodles to prevent stickiness, strain the water and keep aside to cool.
  3. Heat oil in a pan. add the finely cut garlic, red chili, and half of spring onion and keep on stirring until onion is translucent.
  4. Now add the cut tomato and fry until tomato is mushy.
  5. To this add the pepper powder, and soy sauce, add the strained noodles and mix to combine. Now add the grated cheese and mix well.
  6. Check for salt and add accordingly.
  7. Serve garnished with spring onion.
  8. Spicy peppery noodles is ready to serve.
