Instructions
  1. Dice the paneer into cubes and keep aside.
  2. Here I did not blanch the palak to prevent losing nutrients.
  3. Wash the palak to remove impurities, cut into pieces and grind finely with ginger and green chillies in a mixer.
  4. Heat oil in a pan, add the ground palak, saute until raw smell disappears, but should retain the green colour.
  5. Now add the ground tomato, saute until raw smell disappears, add the turmeric, coriander powder and salt and saute until aromatic.
  6. Sprinkle some water if dry, now add the paneer cubes, mix without breaking the paneer cubes,cover and cook in low flame for 3 to 4 minutes.
  7. Care should be taken not to overcook the paneer or else it becomes hard and rubbery.
  8. Palak paneer is ready to serve with roties or paratha.
