An easy South Indian snack…We usually make this with leftover idly batter…When the batter becomes little sour add some spices and little rice flour or maida to get the correct consistency .. mix the spices with the batter and deep fry in paniyaram mold and you get the perfect spicy paniyaram…Have it as is, as it contains the spices for taste or can have it with your coconut chutney or dal sambar…
- Idly batter 1 cup
- Maida flour or rice flour 2 tablespoon
- Big onion or shallots cut finely 2 tablespoon
- Green chilli 2 number
- Ginger cut finely 1/2 teaspoon
- Curry leaves cut 1 sprig
- Coriander leaves cut handful
- Asafoetida powder 1/4 teaspoon
- Oil for frying.
Mix well the idly batter, rice flour (maida flour), finely cut onion, green chilli, ginger, curry leaves, coriander leaves and check for salt, if less add a little.
Heat oil in paniyaram mold upto 1/2 full and when hot reduce heat a little and pour a spoonful of the batter into the mold and cook in medium flame. When one side is done flip and fry the other side until evenly cooked.
Serve hot with chutney.
