Jack fruit Unniyappam

Unniyappam..the authentic delicacy of Malabar…In olden times people used to make Unniyappam with rice flour, jaggery and plantain in certain ratio…then people started experimenting with different fruits…Jack fruit is one of the fruits that is used for making Unniyappam…it can be either jack fruit jam (chakka varattiyathu) or fresh ripe jack fruit…

Here I used fresh jack fruit and appam came out good both in texture and taste..

  1. Make jaggery syrup by dissolving in water and boiling and straining to remove impurities. Grind the jack fruit into a fine pulp and keep aside. Mix the rice flour with the jaggery syrup. jack fruit pulp, sliced dry coconut, baking powder and cardamom powder and mix well. See the consistency, it should be of idly batter consistency. Keep aside for 30 minutes. Heat oil in an unniyappam mold, when oil becomes piping hot reduce heat and pour the batter into mold until half full and and fry, when golden brown flip and fry until golden brown evenly. Serve when warm or cold, both way will be tasty.
