Ela Ada..with jaggery coconut filling

Ada is something we always make in an occasion or when you feel like having some sweet, coconut filled dish…It is South Indians’ own dish…Usually we use banana leaf to steam the ada…Here I used turmeric leaf..it was plenty available during Pongal as people use the leaf as an offering to God…A long time I have been searching for this leaf,,,but was unsuccessful…Luckily this Pongal without fail got the leaf and the result was a delicious flavoured dish…I would say better than banana leaf..

  1. Boil water with salt, add the rice flour, mix well without lumps and keep aside. When cold make into lemon sized balls. Grind coarsely the grated coconut , jaggery, and cardamom. Take a turmeric leaf, on this put the rice ball and spread with your hands to a poori shape. Add the jaggery filling in the centre, fold in the centre like ada. See that the filling is intact. Steam these adas in a steamer for 15 minutes until cooked. When little warm remove from the leaf and serve. Turmeric leaf imparts a beautiful aroma to the dish Serve with evening tea or as an offering to God.
