Delicious tropical dessert…Coconut is such a tasty fruit(nut) and lots of benefits by drinking coconut water daily. In Malabar even though we do not think much about the benefits of coconut…it is like the air we breathe…it is there and we use it without giving much attention to its benefits…Coconut water is a sports drink to replenish your lost minerals and salt by sweating…Today I thought of making coconut panna cotta or pudding, whatever you call it… It was too good and the easiest dessert possible…only time taken is for setting the coconut milk and coconut water…

Ingredients
  • 2 tablespoons Gelatin
  • 250 ml Tender coconut water
  • 250 ml coconut milk Thick (either sore bought or home made)
  • 4 tablespoons Sugar coconut water ( increase or decrease according to the sweetness of the .

Instructions
  1. Soak the gelatin separately, one tablespoon in 1/2 cup coconut water and one tablespoon in 1/2 cup coconut milk.
  2. Keep this aside for 30 minutes to dissolve.
  3. Stir well to see that no crystals are undissolved.
  4. Now keep on a double boiler and stir well to dissolve the gelatin completely, both coconut water and coconut milk.
  5. Now to the coconut water gelatin mixture add balance coconut water, sugar and sir well to dissolve.
  6. Same way, to the coconut milk gelatin mixture add the balance coconut milk, add enough sugar according to taste and stir well heating gently to dissolve the sugar.
  7. When cool take a pudding bowl, add half of coconut milk, keep in the fridge covered to set for minimum one hour.
  8. Take out from the fridge, pour half of coconut water gelatin mixture over the set coconut milk without disturbing the layer underneath slowly.
  9. Keep again in the fridge covered till this layer is set.
  10. Like this alternate layers until done. After pouring each layer keep in the fridge for setting.
  11. Take out after 2 hours. The pudding will be neatly set with the layers distinctly visible.
  12. Cut into pieces and serve cold.
  13. Have your pudding cold.
