To go with rice

A very easy dish of eggplant that goes well with rice or roties…We can make different tasty dishes with eggplant…Health benefits are numerous…contains multivitamin and potassium… has got good anti-diabetic and anti-cholesterol and anti-hypertensive properties…Here I shallow fried it to reduce the use of oil..Since the eggplant is from my sister’s garden, taste wise was awesome…We never know the value of homemade vegetables unless we try once..I do feel it is high time that we try our hands on growing necessary veggies at home…and you can prevent most of the bad affects of pesticides…

Ingredients
  • 250 gm Eggplant
  • 1 tablespoon Chilli powder ( increase or decrease according to taste)
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Sambar powder
  • 1 teaspoon Lime juice
  • to taste Salt
  • Oil for shallow frying

Instructions
  1. Wash and cut the eggplants crosswise into thin round pieces.
  2. To this add the chilli powder, turmeric powder, sambar powder, lime juice and salt and keep aside for 30 minutes.
  3. Heat very little oil in a nonstick pan, add the marinated eggplant pieces in this oil and spread evenly without overlapping so that it is fried evenly.
  4. Keep on turning sides until both sides are golden brown.
  5. Remove from the pan and serve hot with plain rice or curd rice.
