Omelette is nothing unusual and not rare…we always opt for bread and egg in omelette form for breakfast when the usual idly batter is not available…this is our story…we always look for idly or dosa..other options are only if not there…if you like to make omelette more nutritious packed add vegetables which complement the egg when combined..mushroom is one such vegetable. it augments the taste and nutritious value…try this and you people are going to love this…

  1. Beat egg nicely until frothy. Add salt and pepper and beat well again and keep aside.
  2. Finely cut the shallots, green chili and coriander leaves.
  3. Heat 1 teaspoon oil, add the the shallots, green chilies, ginger and garlic and saute well until shallots are light brown in color.
  4. To this add the coriander leaves and tomato cut fine and saute until tomato is cooked.
  5. Now add the finely cut mushrooms, add salt and pepper and saute and keep on cooking until mushroom is cooked and dry.
  6. This will take 5 minutes.
  7. Add the fried mushroom mixture when cool to the beaten eggs and mix well. Check for salt and add accordingly.
  8. Heat one teaspoon oil in a non stick pan, see that oil is fully coated. add half the egg mixture, drizzle some oil on top and cover and cook until egg is set.
  9. Like this make with the balance egg mixture. Your tasty mushroom omelette is ready to serve hot.
  10. Always serve hot to get the exotic aroma of eggs.
